After a long day of snowboarding (for the first time in 2 years mind you… I killed fyi), nothing sounded better than a pipping bowl of soup. This Butternut Squash Curry Bisque was EVERYTHING. Hot, creamy, thick, comforting. What more could you ask for?

This bisque is loaded with veggies from the butternut squash, cauliflower for texture, and carrots for added sweetness. Then the secret to getting the consistency just right is using bone broth! My personal fav is Bonefide Provisions- which can be found in the freezer section at your local Whole Foods or Sprouts, but TJ’s has it conveniently boxed up, ready for use! Bone broth is a natural source of collagen, the most abundant protein in our body. It makes up our hair, nails, skin, joints, and multiple parts of our muscles. Glycine, an amino acid in collagen that is responsible for cartilage production, is not only the highest in bone broth, but is also the precursor to Glutathione, another amino acid that works as a natural cell-bound antioxidant. So basically, all that bruising, swelling, and soreness was gone real quick. A kick of fresh ginger, turmeric, and red chili- sources of capsacin- also help relieve soreness by increasing circulation.

RECIPE-

1/2 TBSP Coconut Oil

1/3 cup Mirepoix

Handful of fresh ginger

1 TBSP Turmeric

1 TBSP Red chili Flakes

1/2 TBSP Black Pepper

1 TSP Salt

3 cloves garlic, minced

1 Whole Butternut Squash, chopped

1 Whole head of cauliflower, chopped

1 bunch of carrots, diced

1 Cup Coconut Cream

3 Cups Chicken Bone Broth

Juice of 2 limes

  1. Heat coconut oil in large pot. Add mirepoix, garlic, chili flakes, ginger, and black pepper to toast. Sautee until brown.

  2. Add in veggies and coconut cream/bone broth mix. Sprinkle turmeric and salt on top Let simmer until veggies are soft.

  3. With an immersion blender, blend together ingredients until soup is thick and uniform in consistency (no chunks left behind).

  4. Zest it up with lime juice. Add cilantro, additional coconut cream, or Sambal Chili Paste for additional flavor!
